Tofu and bean thread vermicelli

Serves: 4-6

 

Ingredients

  • 150g bean thread vermicelli    
  • 1 tablespoon peanut oil
  • 2 cloves garlic, peel and slice    
  • 300g firm tofu, diced
  • 1 bunch Chinese broccoli (Gai Lam), trimmed and chopped
  • 1 red capsicum, deseeded, thinly sliced    
  • 2 carrots, halved, sliced diagonally   
  • ¼ cup kecap manis     
  • ¼ cup vegetarian stir fry sauce
  

Method

1. Place the vermicelli in a large heatproof bowl. Pour over boiling water and leave for 5 minutes or until soft. Drain and set aside.
2. Heat the oil in a wok and stir fry the garlic and tofu over the heat for a few minutes. Remove and place on plate with a paper towel.
3. Add the Chinese broccoli to wok, capsicum and carrot and stir fry for 3-4 minutes.
4. Add the vermicelli, kecap manis and vegetarian stir fry sauce. Add tofu. Toss over the heat to combine. Serves 4-6.
